So will I connect it to the monitors with two DVI cables and one HDMI? Also, can I set it so certain programs will default triple screen and some will go in only one monitor?

 

Depends on the programs. In Windows all three monitors will make up a single large desktop (once you tell Windows to extend the display). Placement and screen use depend on the programs. If a program remembers where you put it last then it will be there when you next open it. Otherwise Windows will open the window on the "primary" monitor.

Would I be able to run a triple monitor setup using two DVI and one HDMI? Also can I make it so web browsers go in only one screen and games cover all three?

It will run 4 displays according to http://www.palit.biz/palit/vgapro.php?id=2141.
