What is the maximum safe temperature you recommend for my 280x's whilst mining? Currently getting around 87 at the moment but it seems a little too hot?

90-95 safe

I'm getting a bit worried and star to adjust fan temp curves at around 85 so as to make sure it never goes above that.  But, *Officially* the max temp is 95.

 

I personally like to keep mine in the high 70's and lower 80's

I dont know about mining but i personally wouldnt go much over 70. And you propably run it 24/7? One of my friends broke his 7970 when mining. He has a few of those in same rig so the temps could have been awful :)

Just took my side panel off and pointed a desk fan at my cards and they have dropped to 77 :).

its 95. all the people that are saying lower, do not take into account that the 280x is designed to run at 95 degrees, everything under that is great

try lowering voltage if you feel uncomfortable at 87C although these cards can run at 95C. If you have warranty then don't worry about it until it gets to 95C.
