As long as you are not doing anything on the second monitor, your fps will not go down. But of course if you are using that second monitor for YouTube for example, the fps in your game might just go down.

So yes, adding a 144Hz monitor in addition to having 2 60Hz monitors will work.

 

Keep in mind the GTX 1060 3GB might not get 1080p 144fps in all games, but will in many simpler looking games.

 I second this. I'm using a 1050ti with a 144Hz monitor right now. Just keep your expectations in check, your 1060 will push high frame rates in many games just fine .
