I want to RAID 0 my game library ssds (dont care about this data). What should I be careful of aside from the ssds dying: Improper shutdowns and stuff.

If either drive fails, you data is gone (basically double the risk of a drive failure). Other than that it should behave like a normal disk, anything you wouldn't do with a single disk you shouldn't do with a raid array.

 

It may require extra work to reinitialize the array in case you need to reinstall Windows for some reason (and you're using software raid).

 

Other than that, you're probably not going to see much of a speed increase outside of benchmarks and boot times may be higher because it takes time to initialize the array.
