HWiNFO has a logging feature. I haven't used it myself, but I presume it saves the data in an easily readable format like CSV which any spreadsheet tool can open and do fancy things with.

Any monitoring software as most have logging feature (csv and html). Then Excel or something like that to visualize it.

 

For example Afterburner gives you graphs as HTML file which can be imported to Excel or similar like you would with CSV.
