iTunes Setup Without Sim

I m Using iPhone 6, Last year It Started not to show network. It Detect The Sim But It Will Not Find A Network, Always Showing 'Searching" or "No Service", Since then im using the phone like iPod, But Today I Reset the phone, And Now I cant pair it with iTunes, where the full backup of my phone lies. iTunes Need To Install A Sim in it, But they dont know that i cant :( Is there Any Way I Can Bypass this, or atleast restore the backups :(
