I recently completed my first build with a 2060 super and 3600x and I am looking for a monitor. I want to go 144hz/120hz 1440p/1080p but I’m worried in the long run I won’t be able to reach 144hz/120hz 1440p/1080p. Can you lower the refresh on most monitors to resolve the issue of 60fps on 144hz in the long run or is this a non-issue.

With adaptive sync (g-sync in your case) it's not an issue if it runs lower FPS than the refresh rate. It should still be smooth, though ideally you want to run higher than 60Hz and closer to 144Hz in most games, since that's why you got a high refresh monitor to begin with, obviously. You shouldn't need to touch the refresh.
