I have a desk that I keep my gaming rig at. I also get my work done on my 2018 MacBook Pro. I would like a way to be able to use a thunderbolt 3 usb c cable to plug into my MacBook that would go to some kind of hub that would have all my USB ports and 1 main cable to go to the monitor. I want to have both the Mac and PC plugged into the hub. I want to be able to switch between my Mac and pc on my monitor easily. I would like for my mouse and keyboard to be plugged into this hub so when I switch from pc to Mac, my keyboard and mouse switch too. Is there any way to do this? And would there be significant input delay?

What you're looking for is known as a KVM switch (Keyboard Video Mouse) which will let you press a single button or key combination to change between your 2 systems. You'll want to find one that supports both the versions of Windows & MacOS you're using, along with the USB peripherals you need, too. An alternate solution would be using software like Synergy by Symless to seamlessly have your mouse & keyboard flow between your PC monitor and the laptop.

I want it to be like where I have a switch that will change the input on my monitor from Mac to pc along with my keyboard and mouse.

KVM switch (Keyboard Video Mouse) will do this for you. Make sure you research whatever one you're considering to ensure it's compatible with Windows 10 and whatever version of MacOS 10.xx you happen to be running. (I'd provide some models, but I don't use a KVM so know nothing about which ones work best for your needs.)
