anybody know of a good tutorial for moding minecraft using java? And on linux?

YouthDigital is a paid service but teaches you how to make great minecraft mods. Just search on YouTube if you have no money.

Java is an interpreted language so if it works on one machine, then it'll work everywhere

it is both interpreted and compile. JavaVM usually compiles the performance critical code to native and then interprets the rest so kinda mix of both worlds i guess.
