First time builder... wanting to go overboard so I wouldn't have to upgrade for awhile... planning to stream amd run all games at 1080p60 minimum. Also wanting to start video editing...  any opinions or tips are appreciated...

Future proofing is a terrible idea. Since you can't see the future you can't know what lifespan you're giving your PC. Just buy for the now and upgrade when you need to, it'll save you money for sure.
