I wanted to know if I can have two 1T m.2 nvme with 1024 mb of cache and it will basically combine into a 2T m.2 nvme with 2048 cache.

No, you can RAID them to make a single 2TB storage device (depending on what RAID mode you use). RAID does not double the cache though
