USB 3 Enclosure raid?

I have a USB 3 external drive with 4 bays and am wanting to set that up for all my stuff (iTunes, Steam, photos) and have a back up as well. I have 2 8tb drives and 2 4 tb drives. I'd like to configure one 8 and one 4 drive together for the main drive, then use the other two as a copy/mirror/back up. 
 
I'm on Mac OS and wondering what anyone would recommend?
Probably each set 12tb configuration as JBOD for the storage then use raid 1 to back up 12tb #2 to 12tb #1?

If I understand you correctly you want to do a 8+4 JBOD in RAID1? That's probably a good way to maximize your utilization without having to figure out how to partition data between two stores and it might be doable on macOS's software RAID tool.

 

Though keep in mind that RAID1 is not a backup solution, just a drive failure protection one. Any errors will be mirrored as well.
