So, what would a system like this go for and should I mention that the CPU & GPU are overclocked and very stable?

If you sold it as parts then maybe 900-1000€,

if you want to sell it as a complete package then 650-750€.

Also how can the cooler be "brand new", if you are using it to cool the cpu?

 

But it really depends on if some kid in your area is looking for a complete setup.
