Never minding price, Whats the better phone, Ive got a oneplus 5 which is the fastest phone Ive ever had, And I can swap it for a pixel 2. Should I? I use it for purely social media and photography - Will the step down to to a single camera be worth it? and is 4GB ram enough? basically, Will the pixel be just as fast?

Yeah, But the thing is ive got a galaxy s5 (Snapdragon 801) with a custom rom which is significantly faster than my tab s3 (Snapdragon 820) on a stock rom - So what about software?

AOSP based software is the best imo, and OP has the best implementation of it in my opinion. I dont like full on google implementations of pixel phones, that all depends on your opinion.

Go for the OnePlus 5.

It has a bit of a bigger battery which works well with the Snapdragon 835 to give a pretty good battery life experience. Dash Charge is very fast compared to Google's solution, my OnePlus 6 can get from 20% to 80% in a matter of 30 minutes. You could also install Google Camera, it's no Pixel 2 photography, but it will definitely get you very close, but you must root it to install some libraries due to some bad camera implementation by OnePlus. It's also got the headphone jack, whether you use Bluetooth or not, it's definitely something to have handy. Another thing to think about is the fingerprint sensor location.

the change to a single camera would be seen as a downgrade to most people but that doesn't apply for pixel phones since they've been long praised for their image quality

also from my experience using a galaxy s8+ 4gb of ram is plenty

If you're a poweruser who uses multiple Apps, 4gb is really much less than you would think.

Samsung lets you use only 3.5gb anyway, because 500mb are reserved for the System.

And from those 3.5gb, at least 1.5 - 2gb are "used" up all the time from services that always need to be up. Android OS, Android System, UI, Google services, etc etc etc.

And of course, the phone will NEVER "fill" up the whole 3.5gb. My S7 edge had 3.5gb~ useable Ram (rest reserved), and it never even hit 3gb. It mostly used only 2,7 - 2,8gb and then the System itself "cleared" the Ram and started Closing apps.

4gb is really not plenty.. you can make that overfill quite easily, even with usual small apps.

.... Anyway, what happens with only 4gb Ram vs. 6-8gb Ram: If you start an App you used before, you have a higher chance, that this App has to start from scratch, instead of "beeing ready" in the Ram.

This will have NO impact on the actuall App performance itself.

@ Dual Camera: Oneplus has no dual camera phones, ALL of them, including up to Oneplus 6T are practically single Camera setups.

Why? Yes there is a secondary Lens. But it is the most useless piece of JUNK that has ever been put into a phone.

This secondary sensor's only purpose is to deliver depth informations for the Portrait Mode - so your Buddy stays sharp, while background is blurred out.

Pixel proves, that this is absolutely not needed at all - Pixel phones do a better boukeh blur on Portrait mode than almost any other Smartphones, that has a dedicated Depth camera sensor ^^

And regarding the Main Sensor:

The Pixel 2/3 sensor is superior to the Oneplus sensor. Even the Oneplus 6(6T sensor, which beats the Oneplus 5 camera a good bit, is still worse than what Pixel 2 offers.

In short: Pixel 2 camera will completely destroy Oneplus 5's Camera. That's not even a fair comparison, this will be like what Gohan did to Cell, when he hit SSJ2 :P
