cpu instruction sets?

I am looking to buy a new cpu, and I noticed some cpu's have a lot of instruction sets, and some just two or three.

does this matter? does it impact performance in any way?

Instruction set is x86, ARM, etc.

If you mean two to three instructions, what the fuck modern CPUs have like 200

i'm looking right now at the intel pentium g5600, it says the instruction sets are SSE4.1 and SSE4.2, nothing more

so any modern cpu would be fine?

CPUs with a lower instruction set can do the same tasks as CPUs with more, it just takes more time to do some of them. A wider instruction set allows CPUs to perform some tasks more efficiently. Generally it doesn't matter on modern CPUs though.

Some old CPUs, if missing certain instruction sets, won't work on some apps that need it. Apex Legends and SSE3 comes to mind.
