no intel, went AMD. much cheaper and you dont lose much at 1440p. also went EVGA card, as customer service is much better than asus's if something goes wrong. got the same size ssd, but went for a 2tb hard drive too. also got a very nice motherboard, non rgb ram but save 40 bucks, and a bigger psu (for 6 euro more) but the same brand.

Rig 1: i7-9700k OC'd to 5.0ghz all core | EVGA XC RTX 2080Ti | ADATA DDR4 2400mhz 4x8gb | ASUS PRIME Z370-P | Asetek 550LC 120mm | ADATA 480GB SSD & Toshiba P300 3TB | Cooler Master Masterbox MB500 | Win 10 Home | Logitech G910 Orion Spectrum, G502 Proteus Spectrum, G933 Artemis Spectrum Snow Wireless Limited Edition, Corsair MM300 Mouse Pad | 2 MSI Optix Curved 27" FHD Monitors

(before i sold the WD drive and MSI gpu - https://www.userbenchmark.com/UserRun/11946219 171 gaming. felt good.)

Rig 2: i7-7700k Stock clocks | MSI Armor GTX 1070 | ADATA DDR4 2400mhz 2x8GB | MSI Z270 A-Pro | WD Green 240GB SSD & 2TB Seagate HDD | Thermaltake Core G21 Tempered Glass Edition | Win 10 Home | 2 HP Omen FHD 144hz 24.5" Monitors

Rig 3: i7-6700 | GT 730 & GT 645 OEM | Some random DDR4 2133mhz 2x8gb sticks | OEM Dell Mobo | WD Black 2TB HDD & Toshiba 1TB HDD | Win 10 Home | 3 27" Dell FHD Monitors

Rig 4: i7-4770 | EVGA SSC 1050ti | Some random DDR3 ram 2x2gb and 2x4gb sticks | OEM Dell Mobo | Stock Cooler | 1TB WD Black HDD | Win 7 Home

RIP

Rig 5 (dead and dismantled and sold) : i7-7820X OC'd to 4.8ghz all core | MSI DUKE 1080ti | ADATA DDR4 2400mhz 4x8gb | Gigabyte X299 UD4 PRO | Asetek 240mm AIO | WD Green 240gb SSD | Other various components that I can't remember

Rig 6 (same fate as rig 5) i7-8700k stock clocks | MSI DUKE 1080ti | ADATA DDR4 2400mhz 2x8gb | MSI Z370 A-Pro | Asetek 550LC 120mm | WD Green 240GB SSD & Toshiba 2TB HDD | Other various components that I can't Remember

Thank you for your fast reply and suggestions!
The thing is that I am a bit afraid of going AMD.
Especially after watching Is AMD a Good Option in 2018??, maybe I need to look more into it.

For right NOW, if all you are going to do is gaming, Intel is still the best option. Ryzen 3000 MIGHT change that, but at this point there's no way to tell. Rumors have it releasing in early July, so if you want to wait and see if AMD takes the crown, do that, otherwise go with what's best now, which again is Intel.

If you do other things outside of gaming like rendering, streaming, or high productivity workloads of any kind then AMD is the king right now.

Just a few overall changes:

Motherboard: For around the same price I'd go with the Gigabyte Aorus Master Z390 instead. The reason is better VRM quality (which translates to better and more stable overclocking, if you care about that at all).

CPU Cooler: For a few Euros more I'd get the NH-D15 instead. It's better cooling overall and the 9700K is a warmer chip. Again, this'll give you your best overclocking potential as well, if you care about that.

I also changed the PSU for compatibility with the motherboard (2x 8-pin connectors for the CPU). The build works out to be a few Euros more, but it is a higher overall quality.

As for a monitor: I can't recommend anything better than this one for within your overall budget:

https://de.pcpartpicker.com/product/sqp323/acer-monitor-xf270hu

It's an IPS panel, 4ms response time, 1440p, and Freesync. The Freesync for this monitor does work with the RTX 2080. Here's a reddit thread where users have tested Freesync Nvidia compatibility (compatible being working functionality without tearing or flickering) :
