You can get the Zotac RTX 2060 brand new for around 380 euros, the Twin Fans one, not that expensive

Anyway, if your monitor is 1080p 60hz, if you don't plan on upgrading it it's just a waste of money to buy any GPU better than the 1060

Yes I plan on getting a 144hz in like a month

A 1060 is nowhere near enough for ultra quality on the latest AAA gaming, the need for higher or lower quality depends to the wish of each person, there's absolutely nothing wrong with picking a GTX 1080 so you can max settings.

High refresh rate is CPU depended, your locked i7 6700 might struggle to go as right as 144fps in games that demand too much of it... the main issue is the rather low all cores frequency of 3.6ghz for today's standards.

Again you'll be wrong if the person desires to max settings, if you're okay playing low, medium etc you can go with a GTX 1050 for all the matter, it's not he point though if you have a budged and you want the best graphical quality your monitor can offer you still should aim as high as you can, saving money here would only make sense if shifting to another component which isn't the case.

It will remain relevant for quite some good years yet, the GTX 1080 equals the RTX 2070 which is still considered a high end product, I believe you should go with it by all means if you plan not upgrading in a couple of years, the GTX 1060 3gb you have specially for its limited memory buffer will become outdated considerably sooner.

Do keep in mind how it'd make more sense going for 1440p60hz and use the good eye candy, 1080p144hz will be more stressing on the CPU than on the GPU.

I’d get them. No card will compete with it in performance or temps at that price range or more.

As long as their bios isn’t crap, should be good.

also... if it hasn't been said yet, consider another ram stick.  8gb (im guessing single channel) is not enough ram for most things, especially in single channel. if you can find a matching speed stick, i would consider doing that as well as the 1080.

I kinda need 144hz though because I need it for esports games, i play survival games as well and all battle royale  games. Will it feel bad from going from 144 when playing esports games then going down to like 100 for br and survival games?

I've had two in SLI since they first came out.  They are quiet, cool and solid performers.  I usually have no problem hitting 70+ FPS at 3440x1440 at ultra present on pretty much everything (except for useless DOF/motion blur stuff) as long as SLI is supported.
