This is my current setup... my question is about my Graphics Card. I have a ASUS 4K monitor but I plan on streaming so I’ll probably be playing at 1080p. Should I swap out my graphics card and also is the HDD enough for streaming and recording video?

Don't use an external SSD as a boot drive, just spend 40$ and get a 250GB MX500

Putting the game on it and seeing it to record there would help. 

 

Id prolly clone my os and use the hdd to hold the videos afterward.

I believe what he meant was use an internal SSD for your OS and have your game that you will be streaming on there.  Use the WD Blue drive exclusively for saving the video from the stream.  With a mechanical drive, the less IO load you put on it the better as performance drastically decreases when you are trying to do more things at once.
