You can enable a "Most used" category in the start menu, but you cannot change the way apps are organized without using a third party start menu. Search "Start settings" in your start menu and enable the option "Show most used apps" to enable this category.

Ok,

 

So I'm not sure what this thing is called.

 

But is it possible to change how this is layed out? Like I know you can just pin the apps you want to the menu, But is it possible to change it from alphabetical to like... Most used apps? 

 

Id like to keep it as thin as posible

If you go to the Start Settings, you can toggle "Show Most Used Apps" which will show the most used apps at the top. All others will still be listed alphabetically.
