Will 5 AF140 quiet edition, an 212 evo in a define r4 cool enough for SLI 780ti and a 4770k overclocked to the max?

I would get a better cooler for the amount that you're spending. Something like an a dual tower air cooler or an AIO water cooler.

Don't be like the millions who have 212's.  Get a Noctua or H100i.  They are expensive, but well worth it (your CPU won't catch fire when "overclocked to the max")

Noctua:http://www.amazon.com/Noctua-NH-U12-Sockets-Heatpipe-Cooling/dp/B00C9EYVGY/ref=sr_1_4?ie=UTF8&qid=1385749480&sr=8-4&keywords=noctua+cooler

H100i:http://www.amazon.com/Corsair-Series-Extreme-Performance-Liquid/dp/B009ZN2NH6/ref=sr_1_1?ie=UTF8&qid=1385749504&sr=8-1&keywords=h100i

I thought the H100i was used when water cooling?

It's closed loop, which means you don't have to worry about any maintenance with the liquid inside.  You just install like an air cooler.
