Using 2 molex to 8 pin adapters for GPU mining?

While I wouldn't recommend using Molex adapters to power GPUs, I've used Molex for Risers, and they've been running for months with no issues. -
I would try actually mining on the card and see if it works. Preferably in Linux. My RX480 would not display in Windows and when installed with another card it would display the same issue that you have. (0Mhz Core, 0Mhz Memory) That being said, it's flashed with a mining BIOS and is happily mining away on HiveOS. If it mines, which shows that it can do intensive tasks without crashing, I would flash a stock BIOS back onto the card. ASICs are usually designed for one algorithm, but you can use them on multiple coins if they share the same mining algorithm. Generally, ASICs lead to centralization, as they are produced by a handful of small companies and the machines are not generally available to the public. There are also accusations that ASIC manufacturers mine on their ASICs before selling them off. Take Bitcoin for example. ~ 40% of all the network hashrate for BTC comes from one region in China (Sichuan). This obviously isn't good for decentralization. While centralization can still occur with GPU mining, it is much harder since GPUs are more easily acquired by laymen. The biggest disadvantage of GPU mining is that GPU mining is significantly more inefficient when compared to ASIC mining. -
