Since you have the game on the same drive as your os are you doing anything in the background? eg antivirus scans, updates etc?

It's an access point, not a switch. The PoE port is used to supply Ethernet and power to the access point. AUX port is used to supply additional Ethernet, should you not get enough from one port. It does not act like a switch, that one port takes in Ethernet and other one(s) give it out.

There is no network configured for the second port, AP is designed to be a client to the network. Not distribute it further.

tl;dr - nope, doesn't work that way. find another way.

What are you using this system for?

If it's just a server and isn't going to be doing anything very intensive, then you'll most likely be fine with the integrated graphics.

If you get a platform that supports PCIe bifurcation, which I think Ryzen supports. Unlikely that older LGA1150 would support it.
    And then get adapters like QIP4X-PCIE16XB01 to 2x DB525-D8XF014XXYY or 2x DIPCIE4XD01.
    That's one way...

For a server it might be cheaper to just use the integrated GPU. Then you can use your PCIe slots for other things.

Link aggregation won't benefit you here since it would all be single source/destination it won't load balance. I would go for a single 10Gb link which will net you the gain in transfer speeds you're looking for, plus it's much simpler to setup.
