My have a fx6300 and I plan to get a rx 580 sometime soon( I currently have a 560) and I was wondering if it would bottleneck any. And if that works, can I overclock it?

I am faster than 80% of all snakes

cpu: AMD Fx-8350

motherboard: GIGABYTE 970 (am3+)

RAM: 16gb ddr3 adata

gpu: AMD xfx rx 560 2gb

psu: 500w

storage: 1tb hdd

It will severely bottleneck RX580, even if you OC that CPU to hell.

I definitely wouldn't say "to hell" but there will be a performance deficit in some cases brought about by the slow and old FX CPU.

The most intense game I might play is overwatch and dota 2, would it be a problem then?

Dota, no. Overwatch, however, shows a performance bottleneck with my brother's i5 7400, which is much better than your FX CPU. I would stick to high/ultra instead of epic (unless I have ultra and epic switched around in my head, just don't apply the highest settings, go for like medium)

Lol I wasn’t planning to, so if I keep it a medium or low it won’t bottleneck? and also can I overclock my gpu when I have this problem or scenario

Again, the GPU won't ne the one holding you back. Overclocking it won't exactly help.
