How much of a difference is there between the :

MSI GTX 1070 Ti titanium 8gb

MSI GTX 1080 Gaming - X 8gb

 In frames and maxed out 1080p

And 1440p if I get a better monitor later

As you can see in CPU heavy games, the difference won't be that noticiable if any at all.

From what I can see the difference is small, the 1080 has the upper, but if you can find 1070ti real cheap it's the better bang for the buck choice.

 

In 1440p the better choice would be 1080

In 1080p there most likely won't be a difference. In 1440p there will be more of a noticable difference, but if you only have a 60Hz monitor then it won't matter which one you get.

High end GPU with 60hz monitor, I don't want to live in the world you describe

Would either of you be pay an extra $80 for the 1080 compared to the 1070Ti

 

Or should I just go for the 1070Ti

Depends on your income. Do you have one ?
Personally I would do, I already did actually and the difference wasn't 80$, but that's because I have a salary and 80$ doesn't sound so bad if you have money every month.
If you're on a tight budget on the other hand, then take the 1070ti, and invenst those 80$ into a better monitor or SSD if you don't have one already

I work with my uncle's hardware shop and do pc builds on the side

My pays $65 a week and I make $50 Fer system I put together

That's wonderful, then picture it like this. If you can wait 1 week and build a single system, then "if we take that you have saved the money already" you'll be able to afford the 1080 with you will be much happier - because you'll have made 115$, and you'll be left with 35 extra. If you haven't saved the money yet, then depends on how much time you can wait until you can buy the GPU if you can't wait, buy the GTX 1070ti

I’d do 1080. Not much for mid tier stuff myself. Though it would fall well into that category now. Plenty around used to not waste getting either for that price. 

If it’s something you plan on keeping while, why not get the strongest card you can now.
