For that much money you could buy an rx580 or gtx 1060 instead

That looks pretty solid! You could consider a different SSD such as one of these two; there's nothing else I would really change.

I was also thinking of getting an M.2 500GB SSD instead of the 240 GB 2.5" one and that 1 TB HDD

If 500gb is enough for you, then totally go for it. That's a solid SSD as well.

One more question, could you please explain me the difference between there two rx 580s?

The main difference should be the cooler. The latter has two fans so I'd probably pick that.
