38"+monitor or 2x 27"?

Hi all

My grandad is looking for a new pc monitor, he is unsure weather to go for 2x monitors so that his wife can read something while he is looking at something else or just one large monitor. we are probably going to rule out 4k due to scaling issues but he may consider an ultra wide. The monitor(s) would need to be mounted on a stand so vesa mounts are a must. Smaller bezels are obviously favorable and budget is around £500 without the stand. Im struggling to find something suitable so any help would be appreciated.
