Need help with my Server and Backing up

I'd also like to use the Nextcloud client sync for my Mum, and set up my own smaller NexcloudPi and use that for incremental on my computer, although I might change this to just use a backup program and mount the shares as drives so as to limit the amount of personal information going over the internet. Unless there's a way to get the Nextcloud sync to only sync over LAN?
What I don't know how to achieve: Getting a backup of the Nextcloud Share, and a copy of my Mum's backup to my own HDD over the internet; and then a backup of my computer and cloud onto my home server
I have a couple ideas. Syncthing, Duplicati and Nextcloud Federation folders. I've just no idea how to do it and all my googling is just confusing me.
