What would you go for

I9 7900x
Hx1200w or axi 1200
Gigabyte aourus x299
Or
Amd tr 1920x
Hx1200w or axi 1200
And x399 aorus or msi board
computer used for rendering,servers, virtual machines ,3d modelling and game engines,editing 
just need to pick motherbaord, power supply and processor
any input would be greatly appreciated.

If thats what you're doing with the machine you'd benefit more from a dual or quad socket xeon system , the i9 or 1920x isn't going to be quite as fast at those tasks as a distributed load will. Essentially there's no reason to use consumer hardware here.

I would go for the Threadipper build; Core i9 stuff can get excessively hot compared to the Threadipper which is comparably more stable from what I've seen through YouTube reviews.

Furthermore, X399 Aorus and AX1200 PSU.
