I'd definitively go for a 2k monitor, it is a HUGE difference from 1080, or it was for me atleast

Case: Corsair Graphite 760T || PSU: Corsair RM650i || Mobo: Asus RoG Strix Z270E || CPU: Intel i5-7600K @4.8GHz || Cooler: Corsair H110i v2 || RAM: Corsair Vengeance DDR4 3200MHz 16GB White LED || GPU: MSI GTX 1070 8GB GAMING X || SSD: Samsung 850 Evo 250GB, Samsung 860 Evo 500GB, Samsung MZ1280 M.2 128GB || HDD: Seagate Barracuda 1TB

I'd get the 27 inch.  A 1080P panel that big starts to look pixelated, in my opinion.  If you can go to a store that has these available to view I'd check them out in person before buying.

If that's not an option I'd buy from someone with a good return policy.

I can't say much on the 1440 but I was in the same boat you were a few weeks ago. Since Im not a hardcore gamer I chose the ultrawide. And I personally love it. It is definitely a lot sharper than my previous monitor was. But my my reason for it was multitasking, as this monitor is like 2 monitors in 1. I've played a few 4k vids on it and while it's not 4k the quality was still great. Just my personal experience with this monitor but I'm glad I got this one, plus it was within my budget lol
