I have an Asus Z370-E motherboard and an 8700k CPU. How many channels of RAM does it operate ideally at? For example I have two sticks of 8GB, i guess thats duel channel? i know its a random question but im just trying to squeeze out as much performance as I can. Any input is greatly appreciated thank you!

The client 1155 platform (6000/7000/8000 series intel cpu) supports dual channel at most, so as long as your memory modules are installed in the correct slots, you'll be operating in dual channel mode and you'll be getting the optimal performance out of them.

 

You might want to check that your ram is running at the right speed though - download CPU-Z and compare the Memory to the SPD tab to see.

8700k only has two RAM channels so ideally two sticks of RAM is good as it allows an upgrade path for, in your case, 32gb.

I got my corsair memory from rated speed of 2400 to 3000, so hopefully you can get a nice OC out of yours :)

1.35 is the standard voltage for heavily clocked modules - i run my 2400 kit at 1.34 to get 3000. DDR4 standard voltage is 1.2.

 

Like with overclocking your cpu, you want to push the frequency as far as you can on the stock voltage (which might be 1.35 for your kit on it's xmp), and then only increase voltage when instability occurs. 

 

And yes, just change the frequency multiplier for ram in your bios. My default is 24x100, and I run it at 18x167 for my 3000 kit (but your board may offer different options and dividers).
