The installation is already complete at that point, GRUB is the last thing to be installed but you do need it or you won't be able to boot into your OS.

I would suggest hooking up your laptop to an external display, it should work for your Ubuntu installation and possibly your bios as well.

Grub is only used when you are trying to boot multiple OSes. If you are going single OS, you don't need it

Is the image you are using to install uefi capable? Does your laptop support uefi? Is secure boot enabled?

 

Load into a live environment and do a list of the disk partitions. The boot partition for a uefi install should be GPT.

 

You should also be able to use the live environment to manually install grub.

 

edit: actually looking at that image again it looks like one of the entries in the boot loader config might not be correct. Try doing a reinstall of grub
