Hi all,

Picked up a GTX1070 for quiet cheap and when combined with my 1080 i get around 1000-1010 sols according to EWBF miner which is set to Zencoin.

 

However when you look at my chart i have massive highs and low dips that i cant explain.

 

Has this got to do with the difficulty of mining increasing/decreasing over the time period?

NO, when you look in your miner you see your actual hashrate, when you look on your pool stats you see your EFFECTIVE hashrate which is based on the number of accepted shares over the last X amount of time, since you don't get the same amount of accepted shares for every time period (generally 5 to 10 minutes) you see it jump up and down wildly, the longterm average of all those peaks and values should end up somewhere around what your miner reports, but this can take 6+ hours before you get enough data to get a proper average.
