According to pcpartpicker says I need 750 watts. If i add fans thsts another 3 and then 35 more for each of the 2 water pumps. So i was thi king thats a little under 800 watts. Should i go more for a 1000 watt pay or should i go 1250ish given i will be overclocking my cpu and maybe my coy eventually down the road.

Could that max my psu a little much? Like running at almost max so often.

Nope:

Rough MAX calculation:

8700k: 250w @ 5ghz

1080ti x2: 450w

Everything else: 50w

= 750w

so 850w is perfectly fine.
