Ignoring processing power for a minute, assuming your GPU and monitor both had HDMI 2.1, could HDMI 2.1 run 4K @ 240Hz?

I am thinking it should be able to since the Techquickie video said that it could run 10K @ 120HZ, so logically it should run 5K at 240HZ and 4K at least 240HZ

14900K, RTX 5090 (360mm AiO), 64GB RAM, 4K 144Hz OLED

Uncompressed, no. With DSC compression, yes.

On hdmi website it is written that it only supports  4k at 120hz...

HDMI doesn't use the word "support" to mean the same thing as capability. Supported formats is not the same as allowed formats (which is anything within the bandwidth limit).
