Exactly what @Being Delirious said.  I have a Windows VM and when I need to host a game server, I remote desktop into it and do what I need to do.  The visual aspect to managing game servers is not there with Linux.  If you decide to go with and only Windows, you could also setup shared folders over the network which would be your basic solution to NAS.

would linux be a good server os? would like to use it for home NAS and also game servers but i feel like windows would be easier?

Stick to Windows for those kind of things. If you don't have experience in Linux then it'll be a pain to set it up.

Depends on the distro, but about 80% of the worlds servers run linux and the rest run Windows enterprise of on version or another.

You could even run it off an old android phone, they have apps for that.
