Project Reaper - Help Needed

I will later make a post as I design the pc in a drawer case I'm doing, but I am trying to find components so I can design. I have found everything with ease except for one thing. Maybe I don't need this, feel free to tell me if I should not get one of these, but I'm looking for a fan controller panel similar to this

The first one is a simple touch screen controller that can control with 3 pins, but I would prefer 4 pin connectors as I've been told they add better efficiency and control (Correct me if I'm wrong please)

Also it's a 5" bay design, which I can fit in my design, but that's awful big to not have anything else on it, so I'm hesitant to use that much room for one function

The second one fixes this by having some i/o, which is great, but it uses molex, which I don't want to use, and it looks a bit tacky if I'm being honest with myself.

On top of that it uses dials to control fan speed, has no temp alarms or anything. I have kids so dials are a no no. I don't want them to be able to do anything to my computer without my permission. I feeel like with the knobs they'd turn the fans off when i wasn't looking and i wouldn't notice until it had done some heat damage to the system. Yes I know they can hit the touchscreen, but dials are more tempting.

Does anyone know of or can find either a 3.5 bay that has a nice touchscreen fan controller system or a 5.5" bay version with some i/o to justify the size and both with 4 pin connectors?

why not just use an internal fan controller and software?

I was wondering about that. How good are the internal fan controllers software, things like temperature alarms and other smart control of the fans? This will be my first official from scratch build so I've never used my own fans and used controllers, not sure about all this and what I need

ok another question. If I look at internal fan hubs, that should I look for? What are features I want/need, what are good signs of quality?

You can use the built in fan control system on your motherboard as needed but for third party options there are lots out there, some that are popular the the NZXT Grid+V3 and Corsair Commander.
