Where are the proofs that show that there's enough "bad things" in a GPU that when vaporised/heated will do damage to a human?

The PCB is made of fibreglass, which can release styrene and acetone when heated/burnt. Also, when heating or burning fibreglass, it's possible for it to release small glass particles into the air, which isn't the best to have in your lungs.

There are various plastics on the PCB such as certain packaging for SMDs and the insides of the display ports. We all know that it's bad to breathe in fumes generated when plastic is heated too much.
