That 280x is still a fairly capable GPU (and GPU prices are insane right now), so depending on what your budget is replacing that CPU with a second hand i7 3770 might be a good option or if you want something better (and have the money for it) you might want to consider upgrading to Coffee Lake or Ryzen, but than you also need to buy new DDR4 RAM which is also insanely expensive and a new motherboard.

So if i was to buy a new cpu (been looking into i5-8600k) would the GPU still be decent?

Well it depends on what games you play at what settings and what kind of framerate do you want at what resolution.

EDIT: The 280x performs around the 1050Ti in most games.
