get a better PSU, the 500w W1 is low quality. a CX550/M would be much better.

Maybe consider getting 8gb of ram instead 16gb and use that money to get a 144hz TN monitor or a larger 27" IPS monitor instead.

Solid. Would personally drop down to an i3 and 8gb RAM for a nice 144hz GSync display but its up to you.

I would suggest going with a locked cpu since the motherboard and cpu cooler are not up to any significant overclocking. A bit can also be saved on the ssd. The MX500 is quite competitive with the 850 Evo.

The savings can be applied to a slightly better cpu cooler, (although the stock cooler is sufficient), better memory, a better motherboard, faster memory, and a much better psu.

80+ ratings certify electrical efficiency. Not quality.

Ive heard really mixed reviews of AMD and never took a serious look at their hardware, what are some drawbacks of going from an Intel i5 8600k to the ryzen 5 1600?

the 1600 would perform slightly worse, but it would still be better since you have a 144hz monitor.
