So I assume that if I stripe 2 drives together under Windows disk management there will be some amount of processing that has to happen on the CPU to make that work. My question is there any reason to beileve this woudl hurt gaming FPS? I know there has to be some amount of overhead but surely it can't be that much.

No, it shouldn't affect gaming performance, unless you have a genuinely terrible cpu.

 

Edit: I see in your profile you have a 3670k, so it shouldn't affect it too much, however with everything going on with intel we'll have to see

Where RAID uses tend to hit CPU use more heavily is for parity calculations. Since RAID 0 is purely for performance and offers no parity calculation, you should see very little effect on the CPU for RAID 0, particularly if you're not using a really old CPU.
