why an m-atx board and atx case? just get a pcie wifi card if you ned it. no need for thermal paste, the h100i has it. why no ssd?

Consider the 8700 instead of the 8600K. Better for productivity. And you won't need a cooler that's as big. 

Consider an air cooler. Mostly the same performance, but quieter, more reliable and cheaper.

You don't have to get extra thermal paste, the cooler comes with some pre applied. 

Don't get an mATX motherboard for an ATX case. Few things look sillier.

You don't have to get a 3600MHz kit for Z370. The cheaper 3000MHz kit will perform identically for what you're using it for. 

Get an SSD. An $800 build without an SSD is sad, one that costs double must have one.

Maybe a cheaper case?

Gigabyte's GPU coolers are among the worst. It's just huge, and low quality. The Gaming X, Strix, SC/SC2 and FTW should cost less, and have better coolers and PCBs.

Why cheap out on the monitor? It's literally the thing you're staring at while using the PC.

not worth the price, you can get a 240gb ssd for the same price as a 32gb optane module and it'll perform better.

Instead the asrock motherboard and wifi adapter wont the ASUS strix z370-g with wifi compatibily better option.

You can add a PCIe Wi-Fi adapter. Ideally, don't use Wi-Fi. Homeplug is an alternative that usually works really well.

for the monitor i wanted the msi one because it was a curved screen and thought its a better buy

not much of a difference, but you won't get stuck with just picking between 1-2 boards.

I don't see the reason to only look for a curved monitor, but the Massdrop Vast is a curved 1440p ultrawide for $550. No G-sync, though, and you'll have to wait for it to be available on Massdrop again.

For the most part it looks good to me, but honestly, I would ditch the optane module and just go for a smaller SSD for your boot drive. I can't imagine there is much of a different in price, and isolating your OS to a drive always makes clean installs easier for me.
