Well today I got my Asus 780 and I'm overclocking it not to extremes but to be in a better state.

Have you run into stability issues? Most people incrementally push the clocks as high as they'll go until they run into problems. Do that then back off a bit and you'll have found your maximum. 

None, no artifacting or anything and the temps are cool.

How might I know when I've found the maximum?

If you start artifacting or games/applications heavy on the GPU are crashing.
