Technically, yes, you should care. They all affect performance, with 512e being the slowest possible option of them all and native 4k being the fastest in modern drives. If a drive doesn't support native 4k sector-size, you should just skip it in this day and age altogether. That said, pretty much all modern drives do support that already.

Most likely, but you could always go and check on the manufacturer's website for specs, it should be mentioned there somewhere.
