I'm going to get a 8600k later this year but as RAM prices are very high right now (for 16Gb at 3000mhz at least) would it be worth getting a lower RAM speed? Something like 2600mhz?

RAM prices should start dropping bit by bit soon. with samsung stating they are going to increase production, and GDDR6 on the way, it should get a bit cheaper depending on how long your willing to wait. That being said, if you look at real benchmarks testing different RAM speeds, you dont gain crazy amounts of FPS by having slightly faster RAM, and at certain points, it becomes not worth it due to performance gain/ per dollar as the returns diminish as you get to the way higher speeds at insane prices.

If your building a very high end build using top parts (1080TI, 8700k, ETC) and are going for more than 1080p gaming at the absolute highest FPS you can achieve, then spending the extra money to gain that little bit of performance may be worth it. However, if your building a medium to high end RIG for 1080P gaming at 100-144Hz even, i dont think you'll need to worry quite as much if you went with lets say 2400/2666 vs 3000MHz RAM, but you also need to be aware of the timings of the RAM your choosing as well.

 

All in all, got the money to spend? definately get 3000-3200MHz RAM minimum. Dont mind saving a few bucks for a minor performance difference, then opt for a bit lower as your PC will still perform well with your choice of the 8600k paired with a decent GPU (i would advise a minimum of 1070TI for your CPU choice as the GPU will be your limiting factor in FPS)
