I plan on selling my system with an i7 6700k in the coming months and want to start on my next build ove already been acquiring things like case psu ect things that arnt very dependant on hardware and I'm stuck on the cpu should I go with coffee lake? Or wait to see if ice lake or cannon lake release soon? Or maybe I should go x299? I really want 8 cores but if prefer Intel due to their ipc and better gaming performance however will zen2 release soon and would it be more viable?

x299 will be supported for at least another generation of chips.  Intel has always replaced the HEDT every 3 years.

If you have to upgrade on the same plattform you've bought the wrong stuff from begin with, doesnt matter if its AMD or Intel both should last 5years+ and by that time both will have new plattforms with nothing worth to upgrade to on the older one.
