"View by process" is still part of Task Manager. So no, "any piece of software" is not able to hide itself from the Task Manager.

Rootkits can hide from Task Manager.

Look up a program called "Process Explorer"

Al;so, if you think you have malware, it's time to run Malwarebytes, or combofix, or superantispyware, or any of a dozen other programs out there designed to expose and remove malware
