This will be my re-entry into the PC gaming arena. I will be using it for gaming and my wife will be editing videos, from time to time, for work using Camtasia and Vegas. Should I spend the extra money on an i7-8700K to get HT? Is there any benefit to PC-3000 or should I save $10 and get PC-2666? The 1TB drive is for local storage and I have a home built NAS for bulk and redundant storage.

Swapped the 8600K for the 8700K, the extra threads are worth it for sure.

The RAM is fine, you'll get some performance improvement up to about the 3200MHz mark so that's fine

I would highly suggest a Blu-Ray player instead of a drive, but I left the drive in there.

Swapped the monitors to a single G-Sync monitor instead since you can't take advantage of FreeSync.

This paints a pretty good picture on why 8700k > Ryzen 1700 for gaming

And will work fine for light NLE and capture work. 

The extra cores from the slower 1700 will only help with NLE a bit.

I think the 8700k makes up for that with base clock alone.

 

Would have to see an actual NLE based test though to be sure.
