Yeah you seem to be doing it correct for the GPU. For the GPU just run a benchmark in the background and play with it a little. It will crash if unstable and the card will go back to default.

 

Now for CPU Overclocking, I prefer to do it via the Bios if possible. I trust doing it in the Bios more than using Intel XTC, but it may be fine. (I use Intel XTC to downvolt my laptop's CPU)

make sure you watch the temps when OC the CPU even more so with the 7700K and with adaptive voltage it can push the volts up high so whatch for that
