I currently have a 1080ti, but I'm using all of the outputs on it for monitors and I need 1 more HDMI and 2 more display ports. Would I be able to add-in something like a 1050 or another low-end card just to add more ports without affecting the performance of my 1080ti?

You should be able to do that, just make sure you set the GPU manually in Nvidia control panel to your 1080ti and use your 1050 or whatever as a physx card. It's defaulted to be automatic so if you happen to game on a display thats connected to your 1050 you will use your 1050 instead of your 1080. 

 

Alternatively you could just buy a displayport to 3 HDMI hub and get more connectors like that. It would be much cheaper than buying a separate graphics card
