Well, I am late to the party as the update was released a month ago.

Anyway, right to the question: my Ryzen system runs fine with RAM stable at 14CL 3200MHz. Should I go through the hassle of 1.0.0.6 update? Or just keep faith in the "if it works, don't change it" mindset?

The latter

If it works, don't "fix" it.

I am not interested in overclocking any of my components (actually downclocked the GPU lol).

I mean it is pretty easy to flash your bios . It's not like every board manufacturer has a built in bios flasher in their boards...

AMD Ryzen R7 1700 (3.8ghz) w/ NH-D14, EVGA RTX 2080 XC (stock), 4*4GB DDR4 3000MT/s RAM, Gigabyte AB350-Gaming-3 MB, CX750M PSU, 1.5TB SDD + 7TB HDD, Phanteks enthoo pro case

I know it's not hard, but it's an annoying process, and if something goes wrong (e.g. Power cut), it would probably mean RMA. If it's not necessary, why do it?
